Chicken on a stick is a State Fair food that has found its way onto restaurant menus. But, it's an easy treat to make at home. Enjoy!
Ingredients:
bonless skinless chicken breasts
onions
bell peppers
wooden skewers
batter
4 cups all purpose flour
1 tsp paprika
1 tbs baking powder
3 cans beer
2 tsp grandulated garlic
2 tsp salt
2 tsp black pepper
4 dashes louisiana hot sauce
oil for deep frying
Directions:
1. Cut chicken breast into cubes about 1 1/2 inches
2. Peel and quarter onions. separate into layers of about 3 rings
3. Cut bell pepper into pieces about same size as chicken
4. Skewer piece of chicken, onion, bellpepper and repeat about two more times.
5. Heat oil to 350 - 360 degrees
6. Combine all ingredients for batter.
7. Dip skewered chicken, onions, pepppers into batter and fry 3 or 4 minutes, until light golden.
