Chicken of the Islands

One of my favorite baked chicken recipes. I usually double the soy sauce and boiling water to make enough for some gravy for the rice. I have made this with pork steak with very good results.
Ingredients:
1 frying chicken, cut up into pieces
1/3 cup soy sauce
1 lemon, juice of
1/2 teaspoon black pepper
3/4 teaspoon salt (opt. as soy sauce is salty)
1 teaspoon ginger
flour, for dipping chicken in
1/4 cup vegetable oil
1 large chopped onion
1 cup boiling water
cooked rice
Directions:
1. Put chicken pieces into a deep bowl.
2. Mix together soy sauce, lemon juice and seasonings. Pour over chicken and let stand for at least 1/2 hour in the refrigerator, turning occasionally to marinate.
3. Lift chicken from liquid and reserve.
4. Roll chicken in flour and brown in hot oil.
5. Put chicken, onions and water into casserole dish.
6. Pour reserved liquid over chicken.
7. Cover and bake in 350 degree oven for 45 minutes or until chicken is tender.
8. Serve over hot rice.
