I came up with this recipe the other day when my daughter and I both were dealing with a miserable head cold. I was craving a nice, hot bowl of soup, but felt too lousy to try to cook everything from scratch. This was the result. I use minced garlic in a jar, and the type of veggies I used were the kind for making soup, not stew. But it's a very flexible recipe. Feel free to use more chicken, if you like.
Ingredients:
1 (46 ounce) can chicken broth
1 (12 ounce) can cooked chicken
16 ounces frozen mixed vegetables
1 (3 ounce) package chicken-flavored ramen noodles
2 teaspoons minced garlic cloves
1 teaspoon dried dill
1/2 teaspoon ground black pepper
Directions:
1. In large Dutch oven, combine the broth, chicken and frozen vegetables. Bring to a boil, then simmer 10 minutes or until vegetables are done. Break noodles into smaller pieces and add to pot, along with the seasoning packet. Add garlic, dill and pepper and let simmer 5 minutes longer, until noodles are done.
