Chicken medallions with mushrooms, broccoli and spinach pasta
Ingredients:
2 cup elbow shaped macaroni, whole-wheat, cooked
3 large mushrooms
1 medium (2-1/2 dia) onions
1/2 cup chopped raw grape tomatoes
10 oz chicken
2 tbsp extra virgin olive oil
1 tbsp, drained capers, canned
1 cup broccoli
3/4 cup frozen spinach
4 oz wine
0.5 cup chicken broth
0.5 fruit without seeds lemons
1 pat (1 sq, 1/3 high) butter
1 tsp sea salt
3 clove garlic
Directions:
1. Slice mushrooms and onions and saute in hot evoo until brown, add sliced chicken breast and cook on both sides. Add chopped garlic and stir so it doesn`t burn - add wine and boil down a bit along with chicken broth, add capers, broccoli and cook just til barely tender then add cooked pasta spirals and heat thru - add frozen spinach and heat then add grape tomato halves - cook til everything is hot but don`t overcook - you don`t want the tomatoes mushy. Enjoy
