Chicken Meatball And Noodle Soup

Pleasing to the eye ,soup. If it looks good, and smells good, it must be good You could substitute turkey if you prefer..both are good. Serve with cornbread or crackers.
Ingredients:
meatballs
1 egg beaten
1/2 c. garlic breadcrumbs (progresso)
1/2 tsp salt. 1/4-1/2 tsp. ground pepper
1 lb. ground chicken breast
soup
1 tbl. oil
1 c. chopped onions and 1 garlic clove minced
4 c. water
3 (10 1/2 oz ) cans condensed chicken broth
1 c. each of sliced carrots, celery,and parsnip
1/2 tsp. salt and 1/4 tsp. pepper
1bay leaf
3 oz. (1 1/2 cups) uncooked egg noodles
1/4 c. chopped parsley
Directions:
1. heat oven to 400' to cook meatballs
2. lightly grease 15x10x1 baking pan.
3. in a lg. bowl combine all meatball ingredients
4. shape into 1 balls and place on greased pan
5. Bake at 400' for 15 min. or until no longer pink in center
6. turn 1 time during baking
7. transfer to paper towels to drain
8. heat oil in lg. saucepan over med. heat until hot
9. add onions and garlic
10. cook and stir 3 min. til softened
11. add water, broth, carrots, celery, parsnip,salt, pepper and bay leaf
12. bring to a boil.
13. reduce heat, cover and simmer 5 min.
14. add meatballs, noodles and parsley.
15. cook 8-12 min. or until vegs. and noodles are tender, stir occasionally
16. remove bay leaf.
17. serve
18. makes 8 (1 1/2 c) servings.
