A refreshing and healthy salad. Served chilled and best with any meat dish.
Ingredients:
500 grams elbow macaroni
1 large chicken breast, boiled and shredded
1 cup boiled, diced carrots
1 cup raisins
1 cup diced sweet ham
1 cup frozen peas
1 cup pineapple chunks
1/2 cup diced red capsicum
3 cups mayonnaise or any low-cal equivalent (adjust to suit taste)
dash of salt and pepper
Directions:
1. Boil macaroni according to package instructions. Drain and set aside.
2. In a large bowl, mix all the ingredients then season to taste.
3. Chill for at least 1 hour before serving.
