Easy Breezy Casserole - Reduced Fat/Calories
Ingredients:
1 pound boneless, skinless chicken breast, cubed
1 cup whole wheat macaroni, cooked
1 cup fresh mushrooms
1 can cream of chicken soup
1/4 cup light mayonnaise
1/4 cup light sour cream
4 ounces fat free shredded cheddar cheese
1 clove garlic
2 cups peas
1 cup whole wheat crackers
Directions:

2. Preheat oven to 350 degrees.
3. Cook & season the chicken breasts with garlic.
4. Cook the macaroni pasta according to directions on the box.
5. Saute fresh mushrooms in nonstick skillet.
6. In a bowl, combine chicken, macaroni, mushrooms, cream of chicken, mayo, sour cream, add frozen peas.
7. Spread mixture in a 9x13inch dish.
8. Top with cheese and crumbled crackers.
9. Cook for about half hour or until cheese is bubbly.
