Ingredients:
2 c plain yogurt; non-fat
4 whole chicken breasts; skinless
4 tsp curry powder
2 tsp canola oil
2 tsp ground coriander
1 medium onion; peeled & cubed
2 tsp ginger; minced
2 large tomatoes; peeled & chopped
4 cloves garlic; peeled & minced
4 each bay leaves
1/2 tsp salt
1 teaspoon lemon juice
1 teaspoon cayenne pepper; ground
Directions:
1. Mix together yogurt, spices, garlic, and lemon juice in a medium bowl.
2. Add chicken, turning to coat.
3. Let stand at room temperature for 30 minutes.
4. Heat oil in a skillet over medium heat. Add onion and cook, stirring about 3 minutes or until lightly browned.
5. Stir in tomato and bay leaves; cook 5 minutes.
6. Add chicken and marinade mixture to pan and mix thoroughly.
7. Cover and simmer over medium-low heat, stirring frequently, for about 20-30 minutes, or until chicken is done.
