Chicken Kiev from Troika

Recipe from a magazine. This dish is served at Shashlik restaurant. Butter oozes out of the chicken as you cut into it. :) Yum!
Ingredients:
150 g butter
5 garlic cloves, finely minced
3 tablespoons finely chopped parsley
1/2 tablespoon black pepper
4 chicken breast halves
100 g plain flour
1 egg, beaten with
1 tablespoon water
200 g cream crackers, crushed into crumbs
Directions:
1. Mix garlic butter ingredients, chill for 30 mins or until firm.
2. Divide butter into 4 oblong pieces.
3. Sandwich 1 half of chicken breast between sheets of plastic wrap.
4. Pound meat until about 1cm thick.
5. Place 1 garlic butter piece on top of breast, then wrap meat around it, tucking in ends.
6. Wrap chicken tightly in plastic wrap.
7. Repeat with remaining chicken.
8. Freeze for 20 minutes.
9. Roll in plain flour, then dip in beaten egg, then cracker crumbs.
10. Do this twice to ensure an even coat.
11. Deep fry chicken for about 10 minutes.
12. Make sure the oil is not too hot or it will burn before cooking through.
