Chicken in Marmalade Sauce

So simple, yet so satisfying. I had tried a very close version of this at a restaurant called 'The Homestead' many, many years ago and loved it. Lo and behold my sister made it at her place one night for tea. I made sure I got the recipe for it this time. The tad of curry makes this dish. Thanks sis!!
Ingredients:
4 chicken fillets, no skin
1/4 cup flour
1 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
125 g butter
4 tablespoons vegetable oil
2 tablespoons sherry wine
1/3 cup marmalade
1/3 cup orange juice
Directions:
1. Mix flour, curry, salt and pepper together in a freezer bag.
2. Place chicken in bag and coat all pieces.
3. Heat oil and 80g of the butter in frypan, add chicken, cook for 10 minutes.
4. Remove, keep warm.
5. Add leftover ingredients to frypan, stir until combined, then pour over chicken or serve in a gravy jug.
