Chicken is browned in butter then baked with mushrooms, onions and white wine the topped with and exquistite layer of gruyere cheese. Gruyere maybe a little pricey but so worth the taste in this recipe!
Ingredients:
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons chopped fresh parsley
1 teaspoon dried dill weed
1/2 cup butter, divided
8 boneless skinless chicken breast halves
2 pounds fresh mushrooms
2 onions cut into rings
1 cup white wine
1 pound gruyere cheese shredded
Directions:
1. Preheat oven to 350 F. In a shallow dish stir together flour, salt, pepper, parsley and dill. Rinse chicken breasts and pat dry. Dredge chicken in the flour mixture.
2. In a large skillet, heat 2 tablespoons butter over medium high heat.
3. Place chicken into the hot buttered skillet and fry until brown on both sides. Transfer chicken to a 1 quart glass baking dish. Add remaining butter to skillet and fry the mushrooms and onion until wilted and slightly browned. Stir in wine and reduce heat to medium. Simmer for 3 minutes to blend flavors. Pour mushrooms over the chicken.
4. Cover dish and bake for 20 minutes in preheated oven. After 20 minutes, remove cover and sprinkle with shredded gruyere.
5. Continue baking for 10 minutes or until cheese is lightly browned and bubbly.
