Chicken, Gorgonzola, & Pear Salad

The Gorgonzola really adds to this salad. It is just too good for words.
Ingredients:
1/2 cup extra virgin olive oil
3 teaspoons red wine vinegar
2 teaspoons honey dijon mustard
salt and pepper
3 cups diced, cooked chicken breasts
1/2 cup walnuts, toasted
1/2 cup crumbled gorgonzola (è è ese can be substituted with similar results)
2 pears, halved,cored,and sliced
14 -16 ounces mixed salad greens
Directions:
1. In a bowl, whisk together olive oil, vinegar, mustard, salt, and pepper to taste.
2. Add chicken, walnuts, and Gorgonzola cheese and toss lightly.
3. Place greens on individual salad plates.
4. Arrange sliced pears in fan shape along one side on top of greens.
5. With slotted spoon, divide the chicken mixture equally among plates.
6. Drizzle any dressing remaining in bowl over pears and greens.
