A hit with everyone who's ever tried it, Chicken Goo is a family favorite. Try it with Spanish Rice to gussy it up some, or put it in a tortilla with toppings for an easy lunch burrito. It's also great just on its own! Chicken Goo makes the most wonderful leftovers (if you HAVE any left over!) Quick, easy, delicious - three requirements for my kitchen.
Ingredients:
4 -5 boneless chicken breasts (still frozen!)
2 (15 1/2 ounce) cans black beans
2 (15 ounce) cans corn (i use frozen and measure with the can from the beans)
1 (15 ounce) jar salsa, any kind (i again measure this with the bean can)
1 (8 ounce) package cream cheese
Directions:
1. Place 4-5 frozen boneless chicken breasts into crock pot.
2. Add drained black beans, corn (drained if canned - but if frozen you don't need to thaw) and pour the salsa over the top of everything else.
3. Cook on high for about 4-5 hours or until chicken is cooked.
4. Add 1 package of cream cheese cut in chunks (just throw it on top!) and let sit for about 1/2 hour.
5. You can serve the chicken breasts whole with the sauce on top, or to make this go further, I shred the chicken up and can easily feed 8-10 people.
