tasty but low-calorie dish with chicken breast
Ingredients:
430 g chicken, meat only, roasted
1 cup onion
1 cup green pepper
1 cup celery
28 ounces canned tomatoes
1/2 tbsp olive oil
1 tbsp herbs
1 tbsp garlic
1 tsp paprika
1 tsp cayenne pepper
1 tsp bouillon
1/2 cup skim milk
1 tbsp all-purpose flour
Directions:
1. brown chicken in 1/2 tbsp oil
2. remove from pan
3. soften onions, green peppers, celery in pan for 10 minutes
4. add herbs, garlic, paprika and cayenne
5. add canned tomatoes
6. stew for 10 minutes
7. mix milk, bouillon and flour in separate pan
8. reduce until thickened
9. add thickening mixture and chicken back to vegetables
10. keep on heat until chicken is cooked through
