Ingredients:
1 1/2 lb. chicken, dark meat
12 oz mixed vegetable
1 cup leeks, chopped
2 cup mushrooms, sliced
24 ounces chicken broth, lowfat
1 cup flour
1 cup milk, 1
2 tablespoons butter
Directions:
1. brown chicken
2. cover with chicken broth, simmer 1 hour
3. cool and skim fat
4. add sauteed leeks and mushrooms
5. bring to simmer
6. make roux with flour and butter
7. add milk and blend (use immersion blender if lumps form)
8. Add frozen vegetables
9. Top with dumplings (made from Heart Smart Bisquick)
