Chicken Florentine W/ Tomatoes

Chicken breasts sauteed with white wine, fresh spinach and diced tomatoes. Substitute chicken broth for wine if needed.
Ingredients:
16 oz boneless, skinless chicken breast
1/4 cup all-purpose flour
1 salt and pepper to taste
1 tablespoon dried italian seasonings
2 tablespoons olive oil
1 tablespoon smart balance spread
1 cup tomatoes, diced
2 cup fresh spinach
1 cup white wine
4 cloves roasted garlic
2 tablespoons fresh parsley, minced
Directions:
1. Place chicken breasts between two pieces of wax paper, and pound to 1/4 inch thick with a meat mallet. Dust chicken with flour, salt , pepper and spices.
2. In a skillet, saute chicken in olive oil over medium heat. Cook until done, turning to cook evenly. Set aside, and keep warm.
3. In the same pan, melt the Smart Balance over medium heat.
4. Add tomatoes and wine. Cook for approximately 10 minutes, stirring occasionally.
5. Mix in spinach, and cook for about 2 minutes.
6. Serve over chicken.
