Weight Watcher, Low fat, Chicken Enchiladas
Ingredients:
16 oz. chicken
1 cup onion
2 cup enchilada sauce
6 corn tortillas
8 oz cheese
Directions:
1. preheat oven to 400 degrees. In vowl, combine chicken, half the onions and half of the enchilada sauce. Soften tortillas, Spoon 1 cup of the enchilada sauce on the bottom of a 9X13 pan. Fill each tortilla with about 1/4 cup of chicken mixture. Roll each tortilla and pleace seam side down on the sauce in the pan. Top with remaining cup of enchilada sauce, sprinkle with cheese and remaining onions. Bake for 10 minutes.
