This one dish casserole was a favorite of mine as a child and now I love making it for my own family. My mom would always cut up chicken (my dad is a big fan of thighs while my mom and I love white meat.) I prefer to buy frozen chicken breasts and call it good. If you play with this recipe, one ingredient that is a must is the onion soup mix. It really is what gives this recipe flavor. Enjoy!
Ingredients:
1 cup long grain white rice (not minute rice)
1/4 cup milk
5 -7 chicken breasts (or other pieces of chicken)
one package dry onion soup mix
1 (10 1/2 ounce) can cream of chicken soup
6 ounces stove top stuffing mix
Directions:
1. Pour one cup of rice, cream soup, and milk in the bottom of a 9x13 pan (with a lid), lay chicken on top, sprinkle with onion soup mix, make stuffing as directed on box and put on top of the onion soup mix. Cover with lid (or foil) and cook at 350 for 1 and 1/2 hours.
