I got this recipe out of a Good Housekeeping cookbook and I have made this more times than I can think of. My youngest son loves this.
Ingredients:
4 boneless skinless chicken breasts
8 ounces swiss cheese, sliced thin
8 ounces cooked ham, sliced thin
3 tablespoons flour, all purpose
1 teaspoon paprika
6 tablespoons margarine
1/2 cup dry white wine
1 chicken bouillon cube, chicken flavored
1 tablespoon cornstarch
1 cup heavy cream
Directions:
1. Spread Chicken breasts flat.
2. Place Ham & Cheese slices on breasts.
3. Fold breasts, ham & cheese over.
4. Fasten edges with toothpicks.
5. Mix Flour and Paprika.
6. Coat chicken pieces with flour mixture.
7. Melt Margerine in 12 skillet.
8. Cook chicken til browned on all sides.
9. Add Wine and bouillon.
10. Reduce heat to low and cover skillet.
11. Simmer 30 minutes or until fork-tender.
12. Remove from skillet, remove toothpicks.
13. Blend Cornstarch and Cream until smooth.
14. Gradually stir into skillet.
15. Cook, stirring constantly, until thickened.
16. Serve over chicken.
