Chicken Chow Mein

Ingredients:
2 tbsp virgin oil
1 cup sliced onion
1 1/2 cups sliced celery
1 cup sliced mushrooms
2 cups chicken stock
3 tbsp soy sauce
3 cups cooked chicken, cut in strips
1 1/2 tbsp cornstarch
1/2 cup minced scallions
chow mein noodles
boiled white rice
Directions:
1. Heat oil in a saucepan; cook the onions, celery, & mushrooms in it for 3 min.
2. Add 1 cup of chicken stock, soy sauce, & chicken.
3. Cook 5 min.
4. Mix the cornstarch with the remaining stock & stir in the chicken mixture until thickened.
5. Add the scallions.
6. Arrange mixture over the noodles, which have been crisped in the oven.
7. Serve with rice as a side dish.
