Chicken Chilli Meatballs

I cannot remember where I found this recipe, it has been a favourite for quite a few years. I use it for finger food occasions, my sister in law uses any leftovers as a pizza topping. I find it very quick and easy to prepare, can be cooked ahead and frozen and is always the recipe that I am asked for. I use minced breast chicken as a healthier choice, however found that minced thigh produces a moister option, I hope that you enjoy!
Ingredients:
500 g ground chicken
2 spring onions, finely chopped
1/2 teaspoon garlic, crushed
2 tablespoons chili sauce (i use hot, it is up to your taste)
1 tablespoon soy sauce
1/4 cup crunchy peanut butter
1/2 cup breadcrumbs
Directions:
1. Preheat oven to 200 degrees Celsius.
2. Combine all ingredients in a large bowl, mixing well.
3. Roll into bite size balls, I find this recipe produces approx 20 as a guide.
4. Place into a shallow baking tray that has been lined with baking paper and bake at 200 degrees for 20 mins, or until golden brown, depending on your oven, you may need to turn during cooking.
5. We serve with a satay dipping sauce, the choice would be yours.
