Ingredients:
2 1/2 pound(s) chicken breasts cooked and diced
2 ounce(s) taco/fajita seasoning
2 ounce(s) oil
3/4 gallon(s) chicken broth
1 1/2 whole(s) red bell peppers
2 whole(s) jalapeno peppers diced
2 whole(s) tomatoes seeded and chopped
1/2 bunch(es) cilantro chopped
1/2 whole(s) red onions chopped
2 tablespoon(s) cumin
1 tablespoon(s) chili powder
salt to taste
pepper to taste
1/8 cup(s) butter melted
1/8 cup(s) flour
Directions:
1. ). Season chicken breasts in 2 oz of taco/fajita and sauté in 2 oz of oil for about 8 -10 minutes and turning them over after 4 – 5 minutes.
2. ). Let Chicken cool and shred. Place Chicken broth in a 2 gallon pot and bring to a boil.
3. ). Add chicken, peppers, onion, seasonings and let simmer for about 20 minutes or until vegetables are tender.
4. ). Add about 1/4 cup of roux (equal parts of flour & melted butter) this will thicken broth like gravy consistency and simmer for about 5 minutes.
5. ). Check desired thickness and taste and adjust both if need be. Remove from heat and add tomatoes and cilantro.
6. Makes about a gallon
