Chicken, Cheese and Mushroom Strudels

Ingredients:
cooking spray
420 g chicken breast fillets, diced (3 small single)
1 medium onion, finely chopped
2 garlic cloves, crushed
200 g button mushrooms, sliced
8 sheets phyllo pastry
60 g weight watchers reduced-fat tasty cheese, grated
2 teaspoons sesame seeds
baby spinach leaves, to serve
Directions:
1. Preheat oven to 200°C.
2. Coat an oven tray with cooking oil spray.
3. Coat a medium non-stick fry pan with cooking oil spray.
4. Place over medium heat.
5. Add the chicken, onion and garlic, and cook stirring, for 5 minutes or until chicken is tender.
6. Add the mushrooms and cook for 2 minutes.
7. Drain off any excess liquid.
8. Set aside for 10 mins to cool.
9. Place two sheets of phyllo on a clean work surface, spaying between each with cooking spray.
10. Spoon 1/4 of the chicken mixture onto the centre.
11. Top with 1 tablespoon of the cheese.
12. Fold to enclose.
13. Place on tray.
14. Coat with cooking spray.
15. Repeat with the remaining pastry and filling.
16. Sprinkle with the sesame seeds.
17. Bake in the oven for 12-15 minutes or until the pastry is golden brown.
18. Serve with spinach leaves.
