Chicken, Cauliflower, Potato and Tomato Tikka Masala

Ingredients:
3/4 tsp olive oil
353 g chicken breast, chopped
179 g onion, chopped
302 g tomato, chopped
214 g cauliflower, cut into florets
443 g potato, chopped, par-boiled
100 g plain yogurt
35 g tikka masala curry paste
Directions:
1. Heat oil, fry onion until translucent. Add tomatoes and chicken, simmer over a low heat.
2. Once the chicken is beginning to turn opaque, add the potatos, cauliflower and curry paste.
3. Stir, adding water to create a sauce.
4. Once the chicken and potatoes are fully cooked, add the yoghurt, stir and serve.
