Chicken Cashew Lettuce Wraps

From here: /2009/09/chicken-cashew-lettuce-wraps/ I have made these several times with great success. Always a pleaser. I make them gluten free, so I use a gluten-free soy sauce.
Ingredients:
12 ounces boneless skinless chicken breasts
1 1/2 tablespoons canola oil
1 cup onion, diced
2 garlic cloves, minced
1 teaspoon soy sauce
1/4 cup cashews, chopped
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1/4 teaspoon ground red pepper
1/4 teaspoon ground ginger
1 teaspoon sesame oil
8 leaves iceberg lettuce
Directions:
1. Mix all stir fry sauce ingredients. Set aside.
2. Heat oil over medium high heat and add chicken. Brown chicken (4-5 minutes).
3. Remove chicken from pan and add onions, garlic, and 1 tsp soy sauce. Brown.
4. When onions are tender, return chicken to pan and add cashews. Stir fry for a minute or two to reheat chicken.
5. Add stir fry sauce and saute for a few more minutes.
6. Remove from heat and spoon into lettuce leaves to serve.
