Crunchy, sweet and nicely seasoned chicken salad that is real good! My neighbor and friend shared this wonderful chicken salad recipe with me. I double this recipe for my family.
Ingredients:
2 cups chicken, cooked and diced
2 tablespoons red wine vinegar
1 1/2 teaspoons lemon juice
1/2 teaspoon sugar
1/4 teaspoon pepper
1/2 cup vegetable oil
1 1/2 teaspoons water
1/4 teaspoon basil
1/8 teaspoon garlic salt
1/8 teaspoon seasoning salt
1/8 teaspoon paprika
1/8 teaspoon dry mustard
1/8 teaspoon dried tarragon
1/8 teaspoon celery seed
1/4 cup mayonnaise
1 cup celery, chopped
1/2 cup cashews
1/2 cup grapes, halved
1/4 teaspoon seasoning salt
Directions:
1. Marinate chicken overnight in marinade ingredients.
2. Drain the juices off the chicken and then add mayonnaise, celery, grapes,cashews and seasoned salt.
3. Mix well and refrigerate until ready to serve.
