This dish is a bit spicy. I love it served on top of rice!
Ingredients:
6 chicken breasts
3 tablespoons oil
1/2 cup onion, chopped
6 tablespoons green peppers, minced
2 garlic cloves, minced
1 -14 ounce diced tomato
1/4 teaspoon thyme
1/2 cup tomato sauce
1 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
1/4 teaspoon cayenne pepper
Directions:
1. Heat oil in a frying pan then fry the chicken until no longer pink.
2. Add onion, green pepper and garlic and brown lightly.
3. Add remaining ingredients.
4. Simmer uncpvered 30 minutes.
5. Serve with rice or pasta.
