This hearty dish has been a family favorite for years!
Ingredients:
1 1/2 lbs boneless skinless chicken breasts, cut into 1/2 inch strips
1 onion, sliced into rings
2 garlic cloves, minced
1 green pepper, julienned
2 tablespoons olive oil
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can italian stewed tomatoes
2 teaspoons garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups rice, prepared
Directions:
1. In a skillet, cook the chicken, onion, garlic and green pepper in oil until chicken is lightly browned and vegetables are tender.
2. Add tomato sauce, stewed tomatoes and seasonings. Bring to a simmer and cook, uncovered, for 5 minutes or until heated through.
3. Serve over rice (or pasta if desired) and top with parmesaan if desired.
