Chicken Cacciatore

Healthy dish that can also be prepared with pork chops or veal.
Ingredients:
4 boneless chicken breast halves
1/4 cup flour
1 medium onion, chopped fine
2 cloves garlic, chopped fine
1 (4 ounce) can mushroom pieces
1 (14 1/2 ounce) can plum tomatoes
1/2 teaspoon basil
1/4 cup tomato paste
1/2 teaspoon dry oregano
1/4 cup red wine
1/2 teaspoon thyme
1/4 teaspoon crushed red pepper
1 bay leaf
salt and pepper
Directions:
1. Dredge chicken in seasoned flour.
2. Saute 5 min per side in 2 T oil (I make this in my wok).
3. Set chicken aside and cook onion and garlic 5 min.
4. Deglaze pan with wine.
5. Add tomatoes, mushrooms, spices.
6. Mix well.
7. Add chicken and simmer covered 45 min.
8. Serve over pasta.
9. Sauce freezes well.
10. You can also make this with pork chops or veal.
