Simple, basic, nutritious chicken broth. excellent comfort food when not feeling very well :o)
Ingredients:
4 pints stock, chicken - homemade
2 carrots
1 large potato
1 medium onion
1 cup peas
3 tablespoons mint
15 cherry tomatoes
125 g split red lentils
Directions:
1. Dice vegetables and combine in a pan with chicken stock and lentils that have been soaked overnight. Also add 250g of whitworths soup & broth mix (355 kcal per 100g). bring to the boil and simmer for 1 hour.
