Chicken Breast With Peach Stuffing

The fruity stuffing adds a lot to this chicken meal!
Ingredients:
2 large boneless skinless chicken breasts (about 8 ounces each)
2 tablespoons vegetable oil
1 cup peach nectar
1 1/2 tablespoons unsalted butter
1 tablespoon brown sugar, packed
1 tablespoon cider vinegar
1 dash ground allspice
2 cups reduced-sodium chicken flavor stuffing mix
1 large peach, ripe, chopped
Directions:
1. In a skillet, brown the chicken breasts on both sides in the oil.
2. Gradually stir in the peach nectar, along with the butter, brown sugar, vinegar & allspice.
3. Bring to a boil, then reduce the heat to simmer, cover & cook for another 5 minutes or until chicken juices run clear.
4. Stir in the stuffing mix & the chopped peach, then cover & remove from the heat.
5. Let the covered skillet stand for 5 minutes or until the liquid is absorbed, then serve & enjoy!.
