Chicken Breast Stew with Vegetables and Potatos

Low fat stew for a side of either pasta or potato
Ingredients:
1 chicken breast
3 potatos
10 oz frozen vegetables
1 tbsp olive oil
1 tbsp corn starch
1 tbsp dijon mustard
2 cups water
Directions:
1. Boil potato in water, no salt.
2. Brown chicken in vegetable oil in skillet.
3. Add water, mustard and spices.
4. When chicken cooked through, add vegetables.
5. When vegetables cooked, mix corn starch in water and add, bring to boil to thicken.
6. Salt and pepper to taste.
