Chicken Braised In Red Wine

Ingredients:
1/2 teaspoon salt
1/4 teaspoon black pepper
4 split chicken breasts (on the bone)
1 red bell pepper, sliced
1 green bell pepper, sliced
1 cup thinly sliced onion
1 tablespoon fresh rosemary, chopped
1 lb fresh tomato, chopped in 1 inch pieces
3/4 cup red wine
Directions:
1. Sprinkle the salt and pepper over the chicken breasts.
2. Heat a large deep nonstick skillet over medium high.
3. Add the chicken, skin-side down, and cook 3 to 4 minutes, or until golden brown.
4. Turn the chicken and add the red and green peppers, onion, rosemary and tomatoes to the pan.
5. Cook, stirring to spread the vegetables out in the pan, for 1 to 2 minutes.
6. Pour the wine into the skillet, immediately reduce the heat and cover the pan.
7. Cook at a low simmer for 20 minutes, or until the chicken is cooked through.
