Chicken & Barley Fiesta Salad

Chicken Salad
Ingredients:
1 1/2 cups barley
1 lbs chicken breast, cooked
1/2 cup yellow onion
1/2 cup green onion
3 large tomatoes, seeded
2 cucumbers, 8 , seeded
1 cup fresh cilantro
1 jalapeno pepper, seeded
1 tsp dried oregano
6 tbls lime juice
3 tbls olive oil
1/2 tsp minced garlic
1/2 tsp salt
Directions:
1. Cook barley according to package directions.
2. Boil ~1.5 pounds of chicken breast for 45 minutes or until cooked through. Cool before shredding.
3. While chicken and barley are cooking, chop remaining ingredients and add to large mixing bowl. Use spoon to remove seeds from tomatoes, cuccumbers and jalapeno.
4. Once barley and chicken have cooked and to mixing bowl.
5. Chill before serving. Yields 6 servings.
