Ingredients:
1 lb chicken breast, cut in 3/4 inch pieces
1 teaspoon olive oil
1 (14 ounce) can stewed tomatoes
1 tablespoon lemon juice
2 teaspoons minced garlic
1 cinnamon stick
1 bay leaf
1/4 cup dry sherry or 1/4 cup chicken broth
salt and pepper
8 ounces egg noodles, cooked and kept warm
1/4 cup crumbled feta cheese
Directions:
1. Saute chicken in oil in large saucepan until lightly browned.
2. Add tomatoes and their liquid, lemon juice, garlic, cinnamon, bay leaf and sherry.
3. Heat to boiling; reduce heat and simmer, covered, until chicken is cooked through; about 15 minues.
4. Season to taste with salt and pepper. Discard bay leaf and cinnamon.
5. Toss chicken mixture with noodles in a large serving bowl. Sprinkle with feta and serve.
