Chicken Apple Sausage, Sweet Corn and Rice Salad

Use Chicken Apple Sausage for the sausage. This is best served freshly made or at room temp.
Ingredients:
1 cup long grain white rice, freshly cooked according to pkg
1/2 lb sausage (chicken apple)
2 cups fresh corn kernels (from the cob)
1 cup mozzarella cheese
1/3 cup pine nuts, toasted
5 ounces fresh spinach
salt and pepper
mustard vinaigrette
1 tablespoon dijon mustard
2 tablespoons red wine vinegar
1/2 cup light olive oil
salt and pepper
Directions:
1. Start long grain rice.
2. Make mustard vinaigrette. In a glass bowl, add mustard and red wine vinegar, slowly add olive oil as you whisk. Add S & P. Set aside.
3. In a skillet, fry sausage over med. heat, crumble as it cooks. Add the corn and cook for 3 minutes stirring occasionally.
4. Place cooked rice in a large bowl, add the hot sausage mixture and the cheese. Toss lightly.
5. Add the spinach and toss.
6. When ready to serve, place on plate, top with pine nuts and mustard vinaigrette. Enjoy.
