Inspired by the classic Waldorf salad, this low-fat version features chunks of white-meat chicken and sweet-tangy Granny Smith apples. From Cooking Light.
Ingredients:
2 cups cubed cooked chicken breasts
1 cup diced granny smith apple
1/2 cup diced celery
1/4 cup dried cranberries
2 tablespoons chopped green onions
1/3 cup low-fat mayonnaise
1 tablespoon reduced-fat sour cream
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon dried tarragon
Directions:
1. Combine first 5 ingredients in a large bowl.
2. Combine mayonnaise and remaining ingredients in another bowl, stirring well with a whisk.
3. Add mayonnaise mixture to chicken mixture, tossing well to coat.
