Chicken and Yellow Rice My Way

Easy one pan main dish. No canned soup in this slimmed down version. Smells great cooking and will draw everyone out of hiding to ask, When's Dinner?
Ingredients:
2 lbs boneless skinless chicken thighs
1 3/4-2 cups chicken broth (depending how saucy you want it) or 1 3/4-2 cups stock (depending how saucy you want it)
5 ounces yellow rice (vigo brand is what i use)
1 medium onion, diced (i use a white onion)
salt
pepper
1/2 teaspoon dried thyme
1/4 teaspoon red pepper flakes
1/2 teaspoon garlic powder
1 -2 tablespoon olive oil
Directions:
1. Salt and pepper chicken on both sides. (Remember the broth/stock has salt in it as well as the rice mix so go easy).
2. In a deep 10 skillet, brown chicken in olive oil, over medium hight heat, on both sides 3-5 minutes each side.
3. Add onion, it'll be tight don't worry, and sauté another 3-5 minutes.
4. Add thyme, garlic powder, and red pepper flakes. Stir to coat.
5. Add rice mix and chicken stock, stir to submerge all rice and distribute rice seasonings. Reduce heat, cover and simmer 25-30 minutes, shaking several times, till rice is cooked but not mushy.
6. Serve with your favorite veggies as a side.
