Chicken and White Bean Soup

Easy and delicious! I like to garnish with Monterey Jack cheese and lime wedges.
Ingredients:
2 (15 ounce) cans great northern beans (divided use)
4 cups water (divided use)
1 1/2 cups chopped onions
1/2 cup chopped red and green bell pepper
2 garlic cloves, minced
1 1/2 tablespoons butter
2 tablespoons chicken bouillon powder
1 (4 ounce) can diced green chilies
1 cup white corn, thawed if frozen
1 teaspoon ground cumin
1/2 teaspoon cayenne powder
5 cups diced fajita chicken (cooked)
fresh minced cilantro
Directions:
1. Using a blender, blend one drained can of white beans with 1 cup of water until smooth.
2. Saute onions, peppers and garlic in butter over medium-high heat until golden brown.
3. Transfer to a crock pot.
4. Place the remaining ingredients except the chicken and garnishes into the crock pot and cook on low for 3 hours.
5. Add the chicken and keep warm on low until ready to serve.
