Chicken and Sauteed Veggies

Low-fat, flavorful dinner. Add some pasta or serve with whole wheat pita bread for a full meal. Try some of the different Ms. Dash blends for different flavors.
Ingredients:
1 lb chicken breast, boneless, skinless, sliced thin
1 zucchini, sliced 1/4
1 yellow squash, sliced 1/4
1/2 red bell pepper, sliced in fajita-size strips
1/2 yellow bell pepper, sliced in fajita-size strips
1/2 green bell pepper, sliced in fajita-size strips
1/2 onion, sliced in fajita-size strips
1 tomato, seeded and cut in strips
1/2 jalapeno pepper, finely diced
2 tablespoons olive oil
1 tsp vegetable seasoning
1 avocado, for garnish
Directions:
1. Chop all veggies and chicken seperately.
2. Combine all veggies, except tomato and avocado in a bowl and toss with 1 tablespoon of olive oil and seasoning.
3. In a large pan, heat remaining tablespoon olive oil over medium high heat. Add chicken and cook until slightly browned. Remove chicken from pan.
4. Pour veggies in pan with their oil and seasoning. Saute stiring frequently until veggies are crisp tender, about 5 mintues. Add more olive oil if needed.
5. Add tomato and saute another minute or so more until tomato is heated through.
6. Serve.
