Chicken and Sauteed Veggies

Ingredients:

Directions:

  1. Chop all veggies and chicken seperately.
  2. Combine all veggies, except tomato and avocado in a bowl and toss with 1 tablespoon of olive oil and seasoning.
  3. In a large pan, heat remaining tablespoon olive oil over medium high heat. Add chicken and cook until slightly browned. Remove chicken from pan.
  4. Pour veggies in pan with their oil and seasoning. Saute stiring frequently until veggies are crisp tender, about 5 mintues. Add more olive oil if needed.
  5. Add tomato and saute another minute or so more until tomato is heated through.
  6. Serve.
