This recipe is a great classic version of a Cajun favorite. Goes great with hot rice. Add a little Louisiana hot sauce or Tabasco when serving for an extra little kick. For the more adventurous, add more cayenne. Read more . Remember when tasting for the hotness of cayenne, wait a few seconds after tasting to get the full effect. Then add if you need more.
Ingredients:
1 tbsp vegetable (or canola oil)
3 tbsp flour
1 white or yellow onion, chopped
1 green bell pepper, chopped
2 stalks celery, diced
2 garlic cloves, minced
2 cups chicken broth
1 chicken bullion cube
1 cup water
1 bay leaf
1 tsp lemon pepper
1/2 teaspoon cayenne
1 tsp garlic powder
1 tbsp soy sauce
1 can diced tomato (italian seasoning or plain)
2 links turkey kielbasa sliced
2 skinless chicken breasts, cut into one inch cubes
2 cups fresh or frozen okra
salt and pepper to taste
Directions:
1. In a large pot, combine oil and flour. Cooking over medium heat, stir the mix constantly till the roux has browned to a caramel color. Add the onion, pepper, celery, and garlic and sauté for 3 minutes, stirring constantly – season with salt and pepper. Add broth, water, and bullion cube. Stir till the cube has dissolved. Add bay leaf, lemon pepper, cayenne, garlic powder, soy sauce, and diced tomato. Stir to combine, bring to a boil. Add the sausage, chicken, and okra. Simmer for an hour. Season with salt and pepper to taste.
2. If you prefer a thicker gumbo, you can double the roux or add more okra.
3. Serve over hot rice. Brown rice is healthier, white rice is tastier.
4. Serves 4-6.
