Simple, healthy chicken dinner
Ingredients:
1/2 cup low fat mozzarella shredded
1 lb chicken tenders
1/2 lb asparagus
1/2 cup reduced sodium chicken broth
1/2 cup chopped tomatoes
1 clove garlic
1/2 cup onion, chopped
2 tsp balsamic vinegar
7 oz roasted red peppers
Directions:
1. Cook chicken and onion in skillet until almost done. Add chicken broth, garlic vinegar, asparagus and roasted red peppers.
2. Add tomatoes 3 minutes before chicken is fully cooked. Top with mozzarella.
