Chicken and Rice Pancakes Recipe
Ingredients:
2 cups instant pancake mix
2 cups milk
2 cups chicken, cooked, shredded
1 1/2 cups italian cheese blend, shredded
1 cup rice, cooked
4 green onions, finely chopped
2 tbsp butter, melted
1/2 tsp salt
1/4 tsp pepper
Directions:
1. Whisk together pancake mix and milk, whisking just until dry ingredients are moistened. Stir in chicken and remaining ingredients, stirring until just blended.
2. Pour about 1/4 cup batter for each pancake onto a hot greased griddle. Cook for three minutes or until tiops are covered with bubbles and edges look dry. Turn and cook other side 5 to 6 minutes. serve with Quick Cream Gravy.
