Satisfying, low calorie one-dish meal
Ingredients:
2 tbsp olive oil
2 cloves garlic
1/2 tsp salt
1 tsp pepper
1 lb potatoes, cubed
1 lb chicken, cubed
4 cups broccoli
1 cup bell pepper
Directions:
1. Heat olive oil in large skillet over medium heat.
2. Add potatoes and garlic, cover, and saute for about 5 minutes.
3. Add seasonings and chicken. Cook, covered, until chicken is done, about 10-15 minutes.
4. Add vegetebles. Cover and cook until potatoes are tender, about 15 minutes.
5. You can add whatever seasonings you prefer. I added some red pepper flakes during cooking, then a dash of balsamic vinegar when it was done.
