Chicken and Pasta with Spinach and Tomatoes

Ingredients:

Directions:

  1. Cut chicken into 1.5 x3 inch pieces. (Or use Purdue chicken tenderloins).
  2. Brown in Pam.
  3. Add the cans of unsalted diced tomatoes and drained mushrooms, basil and pepper flakes.
  4. Simmer, covered, for 15 minutes.
  5. Cook pasta according to package direction.
  6. Add spinach to chicken and tomatoes, cook for about 2 minutees until wilted.
  7. Serve over drained pasta.
  8. Sprinkle with pinch of grated parmesan cheese (optional)
