Ingredients:
1 1/2 cups cooked chicken, cubed
2 navel oranges, peeled and sectioned
2 celery ribs, diced
2 scallions, sliced
1/3 cup mayonnaise
1/4 teaspoon salt
1/8 teaspoon pepper
lettuce or watercress
Directions:
1. Combine all of the ingredients in a bowl. Toss gently to combine.
2. Serve on lettuce or watercress.
