Chicken And Goats Cheese Salad

Great brunch with friends.
Ingredients:
100g green beans, chopped
100g snow peas
100g goats cheese, cubed
plain flour
1 egg, lightly beaten
1/4 cup packaged breadcrumbs
oil for deep-frying
1 red pepper, sliced
3 cups (450g) chopped cooked chicken
lettuce
4 green shallots, chopped
dressing
2/3 cup olive oil
1 tbsp balsamic vinegar
1 tbsp white vinegar
2 tsp seeded mustard
1 clove garlic, crushed
Directions:
1. Boil, steam or microwave beans and peas separately until just tender; rinse under cold water; drain well.
2. Toss cheese in flour, shake away excess flour, dip into egg, toss in breadcrumbs. Deep-fry cheese cubes in hot oil until lightly browned, drain cubes on absorbent paper.
3. Combine beans, peas, cheese, pepper, chicken, torn lettuce and shallots in a bowl, add dressing, toss gently.
4. DRESSING: Combine all ingredients in a jar, shake well.
