This is absolutely my go to recipe for a chilly day that I need some food to stick to everyone's ribs. Add to it that it is super easy.... it is a perfect food. My kids ask for this on a regular basis, regardless of the time of year.
Ingredients:
4 -6 boneless chicken breasts
8 ounces chicken, flavored boullion
1 1/2 cups baby peeled carrots
5 stalks chopped celery
1 1/2 cups sliced mushrooms
1 teaspoon ground black pepper
3 cups bisquick
1 cup milk
Directions:
1. In large pot, place chicken breast and add enough water to cover chicken by a few inches. Bring to boil. Continue to boil 12- 15 minutes until chicken is cooked through.
2. Remove chicken from pot, cut into bite size pieces. Skim any yucky stuff off the water that the chicken was cooked inches Put chicken back in pot with the water, and add boullion. Depending on how big your pot is, you may add 2/3 of the jar - add it to taste as chickeny as you like. Turn stove to a medium setting.
3. Add vegetables to pot, and allow to simmer, or a VERY slow light boil. Allow to cook for 15 minutes.
4. While letting the vegetables cook, prepare dumplings. In a separate bowl, mix Bisquick and milk, and mix with a fork.
5. Making sure soup is at a slight boil, drop dumplings by tablespoonful around the pot and then a few in the middle. Cook for 10 minutes.
6. Then cover pot with lid, and cook another 10 minutes.
7. Enjoy!
