Chicken And Dumplings Casserole

A hearty, quick n easy casserole for the family or company.
Ingredients:
vegetable cooking spray
dumplings
1/2 cup milk
2 tbsp. vegetable oil
1 cup flour
2 tsp. baking powder
1/4 tsp. salt
6 chicken breast, boneless, skinless and uncooked
1 medium-large onion, finely chopped
2 garlic cloves, minced
2-3 celery ribs, coarsely chopped
1 pkg. 10-oz frozen sliced carrots
2 potatoes, coarsly chopped
1/2 tsp. dried sage, crushed
1/4 tsp. ground pepper
2 cans chicken broth, low sodium
Directions:
1. Preheat oven to 350 degrees.
2. *Depending on your oven, 375 works well also.
3. Coat a 2-1/2 quart casserole with cooking spray.
4. Dumplings:
5. In a medium bowl, combine milk and oil.
6. Gradually stir in flour, baking powder, and salt.
7. Mix well into a dough consistency and set aside.
8. Casserole:
9. Place chicken breasts in bottom of casserole.
10. Cover chicken with onion, celery, and carrots.
11. Evenly sprinkle sage and pepper over vegetables; pour broth over ingredients.
12. Using the dough mixture, form 2-inch balls and drop on top of casserole mixture.
13. Cover and bake for at least 1 hour.
